An apple a day...

...is not only an old wives' tale, it's a delicious idea! I love apples, especially the tart kinds like Granny Smith and Fuji. I keep them in the fridge, so I can grab one for a quick snack whenever a craving hits.

But this recipe I am about to share with you may be the *best thing I have ever done with apples.  And guess what?  It's HEALTHY!  Seriously!!

You'll need: 

1 apple
1 flatbread (I use Flatout, Carb-Down version and it's only 90 calories)
Sugar (I use splenda)
Cinnamon
Butter Spray
Cooking Sheet

**Preheat the oven to 350 degrees

Take the flatbread and put it on the cooking sheet.  Spray it liberally with your spray butter.  (From here, if you want, you can put the sheet in the oven for 5 minutes or so to start crisping up the flatbread, while you cook the apples -- not a necessary step, but it might improve the final result).

Slice the apple into wafer thin slices.  Now you can start building your apple tart. 

Sprinkle your sugar/splenda and cinnamon on the flatbread. Then arrange one layer of the apples on the flatbread. You don't have to be fancy -- I just work my way around the edge and move in, like I would for an apple pie. Once your first layer is done, sprinkle more sugar/splenda and cinnamon on the apples, and work on a second layer. Repeat until all the apples are gone (I usually get about 2 layers).

Bake the tart for 10-20 minutes, until the flatbread is crisp and the apples are soft.  Cut into small pieces and eat the whole thing yourself!  If you use splenda, the total calorie count is only about 160, and the recipe is high in fiber.

You can play around with the flatbread, apples and even spices -- I have used pumpkin pie spice with excellent results.
