Chicken Cacciatore in a Hurry
Ingredients:
4 Chicken thighs, skinned
1 Onion, sliced
1 Green pepper, cut into chunks
½ cup Mushrooms, sliced
1 (14.5-oz.) can diced tomatoes
1 Tbs Firmly packed brown sugar
1 tsp Italian seasoning
1 tsp Garlic
½ tsp Salt
1½ cups Rigatoni pasta, uncooked
Directions:
1) Heat the large skillet over medium heat. Place chicken in pan and
add onion and green pepper around it. Sprinkle sliced mushrooms on top.
(If using canned mushrooms, add when tomatoes are added.) Cover and
cook chicken until golden brown, about 10 minutes. Turn when chicken
releases from the hot pan.
2) Stir tomatoes (undrained), brown sugar, spices and pasta into
skillet with chicken. Cover and reduce heat to low. Gently simmer until
pasta is tender, about 15 minutes.
3) Serve with a fresh green salad and vegetables such as broccoli.
