Bring out the slow cooker and line the bottom with cut up potatoes.
Place a whole fryer chicken on top of the potatoes.
Surround the chicken with more cut up potatoes.
Season to your liking. For me, lots of garlic, Italian seasoning, Lawry's seasoning salt, pepper, and a dab of apple pie spice.
Chop up celery and make a ring around chicken.
Add carrots and red bell pepper.
Cook on low all day.
I use waterless cookware so I don't add any water. If you want to add 1/4 cup water to your slow cooker, by all means do so.
When done, de-bone the chicken and add back to the cooker. Mix well and you will have an amazing chicken stew.
