Healthy Chicken Recipes

Please share your chicken recipes here. Don't be shy! If you would like, specify if your dish would be considered lunch and or dinner. If your dish is not considered lunch or dinner please use the appropriate discussion (snacks/breakfast/sides), if there is not one please feel free to start it up.

    My Small, Thin Greek Breading
    This is for 1 wrap, multiply for x wraps

    • Divide 2 slices of low fat cheese (called for mozzarella we used white american) and distribute evenly on wrap
    • 1/2 cup of thawed and well drained frozen cooked spinach over that
    • Then top with 3/4 cup chicken (cooked & diced)
    • Finally 1/4 cup diced tomato
    • Tightly roll and heat for 3 minutes on each side over medium heat in a sauce/frying pan
    • Cut in half & serve with salsa for dipping

    Nutritional information, per serving (salsa not included) 476 calories, 65 g protein, 30 g carbs, 12 g total fat, 6 g saturated fat, 983 mg sodium, 5 g fiber

    This is actually my family's favorite dish and was the most popular dish when I owned Quick Time Meals. 

    Chicken in Red Pepper Sauce

    4 chicken breasts about 5 ounces each

    1 egg slightly beaten in bowl

    1 1/2 cups Italian Breadcrumbs ( I like ot season them with extra garlic and oregano)

     

    Preheat oven to 350.  Dip chicken in egg then in breadcrumbs shake off excess and then place them in a single layer in a baking dish that was sprayed with cooking spray.  When you are done coating them spray the top with cooking spray or if you have an olive oil atamizor then use that.  Bake for 30-45 minutes until chicken is done.

    In a saucepan combine

    1 cup ketchup ( use the low carb if you are watching yoru grams of sugar)

    1/2 cup sugar ( you can use splenda)

    1/2 cup roasted red peppers ( find them in a jar by the pickles) finely chopped

    1/2 cup white vinegar

    1/2 teaspoon red pepper flakes

    Bring to a simmer for 5 minutes.

    Pour sauce over chicken right before serving.

    You can make all of this up ahead of time and freeze it as long as you keep the sauce off the chicken :)

    Hi

    HAVE YOU HEARD OF CHICKEN CORN SOUP ?

    1. You boil the chicken until tender

    2, pick the chicken off the bone and put back into the pot

    3. add 2 cans whole corn

    4. add 2 cans creamed corn

     if you need more broth add swanson's chicken broth

    when you are ready to serve.. add hard boil egg to dish ( don't add hard boiled eggs to pot of soup unless you are going to eat all of it as it gets nasty sitting in the soup any lenght of time)

    IT IS SO EASY TO MAKE AND REALLY TASTY.
