Here is a pizza you can throw together easily for lunch at work or a nice single serve dinner.
White Pesto Pie
1 - Whole wheat pita 2 - Spread on a layer of low fat ricotta cheese 3 - Top that with pesto, as much or as little as you like 4 - Add toppings of your choice. I used slices of tomatoes followed by low fat feta crumbles and chopped green onion (scallions) 5 - Top with cheese. If I had not used the feta I normally use low fat/skim mozzarella. 6 - I cook mine in a toaster oven and it comes out perfect! Take your pie out when cheese has some golden accents.
Hi there, being allergic to all dairy i use veggie cheese or rice or soy cheese. What I do is order from the pizza store in our area a small cheese less veggie or add chicken. when I get it home I add my veggie cheese shreds or parmasan soy cheese to my taste and reheat a little to melt the fake cheese. This is great and I don't feel like I am missing anything when everyone is having pizza for dinner. I can't do any diary. No milk, cheese, yogurt, butter etc. So the rice or soy substitutes are great for me.
